Miso Glazed Mushrooms with Onion and Tamari

Ingredients

  • 14 oz button mushrooms
  • 1 medium onion, chopped
  • 1/3 cup tamari
  • 2 tsp miso paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 2 tbsp water
  • 2 tsp cornstarch or arrowroot powder

Preparation

  1. Boil the mushrooms in a saucepan until fully softened, about 10 minutes, testing one with a toothpick after cooling

  2. Cook the chopped onion in a non-stick frying pan for 2-3 minutes until softened

  3. Prepare the sauce by stirring together tamari, miso paste, apple cider vinegar, maple syrup and water

  4. Drain and rinse the mushrooms, then add them to the frying pan and stir for a minute to reheat and brown

  5. Pour in the sauce and cornstarch or arrowroot powder, then cook for 2-3 minutes over medium heat, stirring, until the glaze thickens
