Mongolian 'Beef' Ramen
Ingredients
- for the “beef”:
- 1 bag soy curls or 1.5 lbs of seitan
- 4 cups vegan beef broth or vegetable broth (only if using soy curls)
- 1/2 cup cornstarch
- 1/2 cup + 1 tbs peanut oil, divided
- 3/4 cup hoisin sauce
- 3 tbs low sodium soy sauce
- 1 tbs rice vinegar
- 1 1/2 tbs brown sugar
- 1/2 tbs grated ginger
- 2 cloves garlic, minced
- 1/2 tsp crushed red pepper
- for the ramen:
- 1 tbs peanut oil
- 1/2 tbs grated ginger
- 4 green onions, white and light green parts minced and dark green parts separated
- 3 cloves garlic, minced
- 1/4 cup water
- 1/4 cup rice vinegar
- 1/4 cup soy sauce
- 4 tbs hoisin sauce
- 3 3.5 oz packages vegan ramen noodles, cooked according to package then rinsed with cold water
- 4 cups broccoli, cut into bite-sized pieces and cooked
- optional toppings: more crushed red pepper & sesame seeds
Preparation
If you’re using soy curls, rehydrate them in the vegan beef broth or veggie broth for 10 minutes
Drain, and gently squeeze the excess broth out of the soy curls
Place them on a clean kitchen towel and pat dry
You can reserve the leftover broth for something else if you’d like
If you’re using seitan, you can skip this step
Toss your soy curls (or seitan) with the corn starch in a large bowl and set aside
Heat a large skillet over medium-high heat and add 1/4 cup of the oil
Add half of the soy curls (or seitan) and saute for 5-7 minutes until lightly browned
Set them aside on a clean plate and repeat with the rest
Set them all aside on a clean plate
Combine hoisin sauce, soy sauce, rice vinegar, brown sugar, and crushed red pepper in a small bowl or measuring cup and set aside
Drizzle another tsp of oil in the pan, and once that’s heated, add 1/2 tbs grated ginger
Cloves minced garlic
Saute for 30 seconds, then add hoisin sauce mixture, bring that to a boil then add soy curls (or seitan) back in the pan and off the heat
Stir to evenly coat then set them aside on a plate
Now time to make the ramen!
Combine water, rice vinegar, soy sauce, and hoisin sauce in a small bowl or measuring cup and set aside
