One Pan Cheesy Chilli
Ingredients
- 1 onion, chopped
- 1 stick of celery, chopped (optional)
- 3 garlic cloves, minced
- 1 cup rice
- 1 pint vegetable stock
- 1 tin kidney beans
- 1 tin pinto beans
- 1 tin sweetcorn
- 1 jar of fajita/enchilada sauce
- 1 tsp chilli powder, salt and pepper
- 1/2 tsp cumin, turmeric and smoked paprika
- 1 cup cheese
Preparation
Fry the onion, celery and onion in a large pan for a few minutes
Add the beans and rice and fry fry for 3 minutes
Add the stock, pop the lid on the pan and cook for 30 minutes or until rice is tender (you might need to add more water, so keep checking/stirring)
Drain the rice and pop all the remaining ingredients plus the drained rice into the pan
Cook for a few more minutes and then serve!
