One Pan Cheesy Chilli

Ingredients

  • 1 onion, chopped
  • 1 stick of celery, chopped (optional)
  • 3 garlic cloves, minced
  • 1 cup rice
  • 1 pint vegetable stock
  • 1 tin kidney beans
  • 1 tin pinto beans
  • 1 tin sweetcorn
  • 1 jar of fajita/enchilada sauce
  • 1 tsp chilli powder, salt and pepper
  • 1/2 tsp cumin, turmeric and smoked paprika
  • 1 cup cheese

Preparation

  1. Fry the onion, celery and onion in a large pan for a few minutes

  2. Add the beans and rice and fry fry for 3 minutes

  3. Add the stock, pop the lid on the pan and cook for 30 minutes or until rice is tender (you might need to add more water, so keep checking/stirring)

  4. Drain the rice and pop all the remaining ingredients plus the drained rice into the pan

  5. Cook for a few more minutes and then serve!
