Potato and Leek Soup

Ingredients

  • Leak and potato soup
  • 6-8 medium size potatoes quartered
  • 3 medium size leeks
  • 2 cups water
  • 2 chicken stock cubes (used @mccormickspice which are gf and vegetarian)
  • 1/2 cup of milk or cream of choice. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • Thoroughly wash the leeks by soaking and then cutting in half lengthwise. Dirt is frequently trapped between the layers of leaves so do wash them well ... I hate chewing on dirt
  • Lightly sauté onion and leeks in olive oil
  • Add 2 cups of water and the chicken stock
  • Salt and pepper
  • Cook 15 mins
  • Mash or use an immersion blender
  • Remove from heat
  • Add 1/2 c milk and mix well
