Ingredients: Leak and potato soup; 6-8 medium size potatoes quartered; 3 medium size leeks; 2 cups water; 2 chicken stock cubes (used @mccormickspice which are gf and vegetarian); 1/2 cup of milk or cream of choice. ⠀⠀⠀⠀⠀⠀⠀⠀⠀; Thoroughly wash the leeks by soaking and then cutting in half lengthwise. Dirt is frequently trapped between the layers of leaves so do wash them well ... I hate chewing on dirt; Lightly sauté onion and leeks in olive oil; Add 2 cups of water and the chicken stock; Salt and pepper; Cook 15 mins; Mash or use an immersion blender; Remove from heat; Add 1/2 c milk and mix well
