Potato “Meat” Casserole

Ingredients

  • 1 pack @traderjoes beef-less ground
  • 2 cloves garlic, minced
  • 1 carton brown mushrooms, diced
  • 1/2 cup diced tomatoes (canned)
  • 4 large gold potatoes
  • 2 tbsp vegan butter (@miyokoscreamery)
  • 1 cup almond milk

Preparation

  1. Peel & boil the potatoes

  2. Meanwhile, make the “ground meat” filling by sautéing in oil over med heat garlic, the mushrooms & ground beef, cooking until shrooms lost all their moisture. add in a bit of tomatoes or tomato paste & season w s&p

  3. Once the potatoes are soft, mash w vegan butter & almond milk. you want it to be overall creamy, with some small chunks

  4. In a large casserole dish (no need to oil), layer 1/2 the mashed potatoes on the bottom, then the meat & top w the rest of the potatoes

  5. Bake @ 400 for 25mins, broiling for another 5min to brown the top

  6. Devoured these beautiful casserole slices with a light side salad, enjoy my friends
