'Rad Nah' Aka Rice Noodles in Thicc Gravy
Ingredients
- 175g dried wide rice noodle
- 100g of mushroom pork
- 2 tbs light soy sauce
- 2 tbs dark soy sauce
- 2 tbs yellow bean sauce
- 2 tbs tapioca starch (could use potato or cornstarch as alternatives)
- 2 tbs water
Preparation
Make the slurry by mixing tapioca starch with water until there are no lumps. Set aside.
Heat some oil in a wok or wide pan and fry the garlic on low-med heat until it smells delicious .
Add mushroom pork and stir-fry with the garlic for a further 30 seconds - 1 minute. Add stock and choy sum, soy sauces, and yellow bean sauce — simmer until choy sum has shrunk in size. Turn down heat to low and add starch slurry and stir until the sauce thickens. Pour sauce over fresh rice noodles and you’re done
