Red Cabbage and Steamed Spinach with Refried Beans and Buckwheat Cakes

Ingredients

  • spinach
  • cabbage
  • buckwheat flour

Preparation

  1. Red Cabbage with shredded Apple

  2. Cut the cabbage in thin slices and place them in a pot with as much water as it takes to submerge all of the cabbage. Shred one apple, add it to the cabbage and steam until the cabbage is tender. Season with salt on your plate, that way it tastes way more intense rather than letting the salt cook into the dish (and you take in less sodium, if you are trying to reduce your intake)

  3. Buckwheat Pancakes

  4. Mix 1 cup of buckwheat flour with 1/4 of a cup of water and knead until you get a dough. Form 6 balls and heat up your pan. The buckwheat dough can be very sticky no matter how much flour you add. So to form the cakes as round as possible, place a ball into your pan and press them carefully down with a spatula. Bake them on every side until they show a light brown coloring
