Roasted Cauliflower with Tzatziki Sauce

Ingredients

  • 1 cauliflower head, cut into florets
  • 3/4 cup Vitasoy Greek Style Soy Yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chilli flakes or to taste
  • 1/4 cup hot sauce (optional)
  • 2 tablespoons hemp seeds
  • 1/2 cup Vitasoy Greek Style Soy Yogurt
  • 1 small cucumber, grated
  • 1/3 cup finely chopped parsley
  • 1/3 cup finely chopped mint
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced
  • salt and pepper, to taste

Preparation

  1. Preheat oven to 180C and line a baking tray with parchment paper.

  2. In a mixing bowl, add cauliflower florets, yogurt, olive oil, lemon juice, spices and hot sauce. Give it a good toss until the florets are well coated in the yogurt mixture.

  3. Arrange on the prepared baking tray and sprinkle with hemp seeds.

  4. Pop in the oven for 40-45 minutes or until the cauliflower is soft and golden brown.

  5. To make the sauce, combine all the ingredients in a small bowl until smooth.

  6. Serve cauliflower warm with the sauce on the side. Enjoy right away!
