Roasted Cauliflower with Tzatziki Sauce
Ingredients
- 1 cauliflower head, cut into florets
- 3/4 cup Vitasoy Greek Style Soy Yogurt
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chilli flakes or to taste
- 1/4 cup hot sauce (optional)
- 2 tablespoons hemp seeds
For the Sauce
- 1/2 cup Vitasoy Greek Style Soy Yogurt
- 1 small cucumber, grated
- 1/3 cup finely chopped parsley
- 1/3 cup finely chopped mint
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
- 1 garlic clove, minced
- salt and pepper, to taste
Preparation
Preheat oven to 180C and line a baking tray with parchment paper.
In a mixing bowl, add cauliflower florets, yogurt, olive oil, lemon juice, spices and hot sauce. Give it a good toss until the florets are well coated in the yogurt mixture.
Arrange on the prepared baking tray and sprinkle with hemp seeds.
Pop in the oven for 40-45 minutes or until the cauliflower is soft and golden brown.
To make the sauce, combine all the ingredients in a small bowl until smooth.
Serve cauliflower warm with the sauce on the side. Enjoy right away!
