Roasted New Potatoes
Ingredients
- 500g new potatoes, halved
- 1/2 red onion, peeled and finely sliced
- large handful of olives (we use green and black), halved
- 1 bag of rocket/arugula
- juice and zest of 1 lemon
- 3 tablespoons of apple cider vinegar
- 1 teaspoon of coconut sugar
- 1 tablespoon of wholegrain mustard
- large pinch of salt
- large pinch of pepper
- olive oil
Preparation
Simply heat the oven to 220c fan. Half the new potatoes, then add the new potatoes to a large baking tray with a drizzle of olive oil and a large sprinkling of salt. Roast for 35-40 minutes, until the potatoes turn golden and are soft in the center. While they cook, place the sliced red onion in a bowl and pour over the apple cider vinegar, coconut sugar and a pinch of salt. Mix well and leave to one side until needed - this will let it do a quick pickle
Once the potatoes are cooked, let them cool then place them into a large mixing bowl. Drain and add the diced red onion, olives, rocket/arugula, lemon juice, lemon zest, wholegrain mustard, a drizzle of olive oil, salt and pepper
