Simple Healthy Vegan Lentil Soup

Ingredients

  • Cilantro
  • 1 big onion
  • 500 grams lentils (1 pound)
  • 1 big sweet potato
  • 2 medium carrots
  • Scallions
  • 1 big green pepper
  • Salt

Preparation

  1. Before you make this recipe, make sure to soak the lentils for at least 6 hours to help with digestion.

  2. Chop the veggies, including onion, scallions, and green pepper, into very small chunks.

  3. In a big, deep pot, spray some olive oil and sauté them all, then pour water until you cover at least half the pot, adding more if you prefer a more liquid soup.

  4. Peel the carrots and sweet potato, cut them with carrots into small pieces and sweet potato into big ones, add them to the pot with some salt, and let it cook at medium heat for about 20 minutes.

  5. Take out the sweet potato, smash it to make a purée, add it back to the pot, and mix very well to add sweetness and thickness.

  6. Let it all cook for at least 1 hour at medium heat, add more salt if needed, and 10 minutes before it is done, add some chopped cilantro and enjoy.
