Smokey Aubergine Bhaji
Ingredients
- 1 tbsp veg oil
- 2 medium aubergines
- 1 medium onion finely chopped
- 1 tsp cumin seeds
- 1.5 tsp nigella seeds
- 1 tbsp finely chopped garlic
- 1 tbsp finely chopped ginger
- 1-2 green chillies finely chopped
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1/4 tsp cayenne pepper
- 100ml veg stock
- handful chopped fresh coriander
- salt
Preparation
Cook your aubergines whole on direct heat
Either on a medium gas burner or if you haven’t got gas use put a cast iron or non stick pan on the hob on medium high and put the aubergines in the dry pan
Turn the aubergine every few mins until soft and squidgy all over
Remove and set aside to cool
When cool enough remove the skin and discard and rough chop the aubergine flesh
Heat a frying pan or skillet to a medium high heat, fry off the onions, ginger and green chilli and cumin and nigella seeds for five mins stirring regularly
Stir in the garlic and a pinch of salt and cook off for a few more mins
Stir in the dry spices and cook these off for two mins stirring continuously
Stir in the chopped tomatoes and stock and add the chopped aubergine flesh, turn the heat down to medium, cover and leave to cook for five mins
Stir in the chopped coriander and season to taste
