Super Quick Coconut Vegetable Curry with Turmeric Pickles, Chana Roti & Rice
Ingredients
- 2 tablespoons of turmeric paste mix
- 1 tablespoon of basic curry powder
- 1 onion diced
- 1 butternut squash, peeled & diced
- 2 zucchini, diced
- 1 sweet potato, peeled & diced
- 300ml coconut milk
- 250ml stock
- salt and pepper.
- serve with rice, pickles & roti.
Preparation
Just heat up a saucepan with a good splash of oil. Add the onion and the turmeric mix. Cook for a minute then add the curry powder, cook again for a minute & add the rest of the vegetables, coconut milk & stock. Then season and simmer for 30 mins
Serve with rice, pickles & roti
You can add lots of extras but this is what I generally have in the fridge. Chopped coriander at the end, french beans, diced potatoes, greens etc are all good. I made some simple cucumber pickles too, with Turmeric slices added and bought some roti
