Super Quick Coconut Vegetable Curry with Turmeric Pickles, Chana Roti & Rice

Ingredients

  • 2 tablespoons of turmeric paste mix
  • 1 tablespoon of basic curry powder
  • 1 onion diced
  • 1 butternut squash, peeled & diced
  • 2 zucchini, diced
  • 1 sweet potato, peeled & diced
  • 300ml coconut milk
  • 250ml stock
  • salt and pepper.
  • serve with rice, pickles & roti.

Preparation

  1. Just heat up a saucepan with a good splash of oil. Add the onion and the turmeric mix. Cook for a minute then add the curry powder, cook again for a minute & add the rest of the vegetables, coconut milk & stock. Then season and simmer for 30 mins

  2. Serve with rice, pickles & roti

  3. You can add lots of extras but this is what I generally have in the fridge. Chopped coriander at the end, french beans, diced potatoes, greens etc are all good. I made some simple cucumber pickles too, with Turmeric slices added and bought some roti

  4. A little bit of antioxidant infused sunshine food
