Sweet and Sour Tofu
Ingredients
Sauce
- 1/4 cup vegetable broth
- 1/4 cup tomato paste
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup
- 1 tablespoon miso
- juice from 1/2 lime
- 1 teaspoon sriracha (optional for spice)
- 1/2 tablespoon arrowroot powder or cornstarch
- salt and pepper to taste
Tofu
- 1 block tofu
- 1-2 tablespoons sesame oil
- salt and pepper to taste
- 1 tablespoon liquid aminos or soy sauce
- 1 tablespoon arrowroot starch or cornstarch
Broccoli
- 1-2 tablespoons sesame oil
- salt and pepper to taste
- 1 head broccoli
Accompaniments
- grain of choice, such as brown rice or quinoa
Preparation
Preheat the oven to 425 degrees.
In a large bowl, toss the tofu in sesame oil and liquid aminos.
Add arrowroot starch half a tablespoon at a time and toss until the tofu is fully coated, shaking the bowl to ensure even distribution.
Evenly distribute the tofu on a lined sheet pan and roast for 40-50 minutes.
Toss the broccoli in sesame oil, salt, and pepper, then roast for 30 minutes.
To prepare the sauce, add all ingredients except the starch to a saucepan, bring to a simmer, add the starch, and whisk until thickened, about 60 seconds, then set aside.
Toss the tofu in the sauce and serve with the roasted vegetables and a grain of choice.
Tips
Wrap the tofu in a paper towel and press with something heavy for 10-30 minutes before using.
