Sweet Potato & Mixed Bean Chilli

Ingredients

  • 2 tbsp olive oil
  • 1 large onion finely chopped
  • 1 heaped tbsp chopped garlic
  • 1-2 green chillies
  • 2 bell peppers diced
  • 1 tsp cayenne pepper
  • 1 heaped tbsp paprika
  • 1 heaped tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp all spice
  • 2 bay leaves
  • 1 tbsp dried oregano
  • 1 heaped tsp cocoa powder
  • 400g tin chopped tomatoes
  • 3 tbsp tomato purée
  • 2 tins kidney beans
  • 2 tins mixed beans
  • 400ml veg stock
  • 2 medium (approx 500g) sweet potatoes, peeled and cut into bite sized pieces
  • Salt & black pepper
  • Handful chopped fresh coriander
  • Squeeze of lime

Preparation

  1. Using a large pot, sauté off the onion in the olive oil on a medium high heat for 5 mins, then add the chopped peppers, fresh chilli and garlic and sauté for another 6/7 mins

  2. Add the dry spices, oregano, cocoa powder and bay leaves and sauté for a few mins to cook through the spices. Then add the chopped tomatoes, beans, veg stock and tomato purée. Stir well and bring up to a medium simmer for 30 mins

  3. Add the sweet potato chunks, semi cover and simmer on low for 40-45 mins, stirring occasionally to prevent sticking and ensure even cooking

  4. Season to taste with salt and black pepper, add the fresh coriander and a squeeze of lime and stir well
