Vegan Creamy Garlic Spinach Pasta
Ingredients
- 1 peeled potato
- 1/3 cup chopped onion
- 1.5 cups water
- 1 cup full fat coconut milk
- 1 clove garlic
- 1 tablespoon tahini
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika

- spinach

- hemp seeds
Preparation
Cook pasta according to package instructions.
Boil 1 peeled potato and 1/3 cup onion chunks in 1.5 cups water for about 15 minutes until soft.
Blend the cooked vegetables with 2 tablespoons of the cooking water, 1 cup full fat coconut milk (after draining coconut water), 1 clove garlic, 1 tablespoon tahini, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon paprika (use more paprika if desired).
Add the blended mixture to a pan and heat over medium heat.
Toss with the cooked pasta and spinach, and add tomatoes and hemp seeds if desired.
