Vegan Creamy Garlic Spinach Pasta

Ingredients

  • 1 peeled potato
  • 1/3 cup chopped onion
  • 1.5 cups water
  • 1 cup full fat coconut milk
  • 1 clove garlic
  • 1 tablespoon tahini
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • pasta
  • spinach

Optional

  • tomatoes
  • hemp seeds

Preparation

  1. Cook pasta according to package instructions.

  2. Boil 1 peeled potato and 1/3 cup onion chunks in 1.5 cups water for about 15 minutes until soft.

  3. Blend the cooked vegetables with 2 tablespoons of the cooking water, 1 cup full fat coconut milk (after draining coconut water), 1 clove garlic, 1 tablespoon tahini, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon paprika (use more paprika if desired).

  4. Add the blended mixture to a pan and heat over medium heat.

  5. Toss with the cooked pasta and spinach, and add tomatoes and hemp seeds if desired.
