Plant-Based Lentil and Vegetable Pasta
Ingredients
- 1 onion
- 1 tbsp olive oil
- 2 cloves of garlic
- 2 tsp paprika, cumin, coriander, ginger
- 4 handfuls of lentils
- 1 tin chopped tomatoes
- water
- 1 broccoli head, chopped
- 2 peppers, chopped
- 1/2 lemon, juiced
- black pepper
- fresh parsley
Preparation
Heat the oil in a pan and sauté the onion and garlic.
Add the spices, chopped tomatoes, lentils, and simmer.
Meanwhile, chop the vegetables and add them to the sauce.
Rinse out the can of chopped tomatoes and add the water to the pan as needed.
Add lemon juice and black pepper to taste.
Serve with pasta, fresh parsley, and cheese.
