Vegan Gluten-Free Rice Bowl

Ingredients

  • 1 small white onion, diced
  • 1 15 oz can black beans, drained
  • 1 medium cooked sweet potato, cubed
  • 1 red bell pepper, diced
  • 1 cup cooked brown rice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1 teaspoon paprika

Toppings

  • avocado
  • salsa
  • pico de gallo
  • corn salsa
  • tortilla strips
  • lime

Preparation

  1. Sauté onions, bell pepper and garlic in oil for 5-8 minutes.

  2. Add seasonings, black beans, sweet potato, and rice.

  3. Heat through.
