Vegan Gluten-Free Rice Bowl
Ingredients
- 1 small white onion, diced
- 1 15 oz can black beans, drained
- 1 medium cooked sweet potato, cubed
- 1 red bell pepper, diced
- 1 cup cooked brown rice
- 2 cloves garlic, minced
- 1 teaspoon salt
- 2 teaspoons cumin
- 1 teaspoon paprika
Toppings
- avocado
- salsa
- pico de gallo
- corn salsa
- tortilla strips
- lime
Preparation
Sauté onions, bell pepper and garlic in oil for 5-8 minutes.
Add seasonings, black beans, sweet potato, and rice.
Heat through.
Tips
Make a big batch and freeze it for up to 6 months for quick meals.
