Vegan Zucchini Slice

Ingredients

  • 1 cup of chickpea flour
  • 1 cup of nutritional yeast
  • 1/2 cup of tapioca flour
  • 1 teaspoon baking powder
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of cumin
  • 4 spring onions chopped
  • 1/2 red capsicum, diced
  • 1 cup of zucchini and 1 cup of pumpkin, grated
  • 1/3 cup of water

Preparation

  1. Preheat your oven to 180 degrees and line your slice tray with some baking paper

  2. All you need to do next is combine the dry ingredients thoroughly in a bowl. Next adding your the water and vegetables mixing well to combine

  3. Pour mixture into your tray and sprinkle over some extra nutritional yeast on top. Bake for 40 minutes or until brown and delicious looking

  4. This keeps well in the fridge for up to 1 week and I usually serve with a small side salad. Enjoy
