Warm Meals and Roasted Veggies

Ingredients

  • sweet potato
  • broccoli and portobello mushrooms
  • avocado oil
  • zaatar spice
  • garlic
  • onion powder and a pinch of Himalayan salt and black pepper
  • 1 tbsp olive oil
  • 1 tbsp tahini
  • 1 tsp ACV
  • 1.5 tsp of coconut aminos and a pinch of garlic powder
  • 1/2 avocado

Preparation

  1. Roast sweet potato (I warm mine in the micro for like 4-5 mins so that it cooks quicker in the oven), broccoli and portobello mushrooms at ~ 425 for 15 mins (give or take)

  2. Coat it in avocado oil, zaatar spice, garlic, onion powder and a pinch of Himalayan salt and black pepper

  3. For the sauce: mix ~ 1 tbsp olive oil, 1 tbsp tahini, 1 tsp ACV, 1

  4. Tsp of coconut aminos and a pinch of garlic powder

  5. Drizzle on top! Top with 1/2 avocado and Usually I’d add a fried egg but I got lazy
