Peach, Ginger and Rosemary Lemonade

Ingredients

  • 4-5 peaches
  • 2 inches fresh ginger
  • 2 rosemary sprigs
  • 3 tbsp sugar
  • juice of 1/2 lemon
  • 1.25 liters water

Preparation

  1. In a pan, on medium heat, add the sliced peaches, ginger, rosemary sprigs and sugar.

  2. Cook for 10 minutes, stirring occasionally.

  3. When it looks like compote, add 250mL of water and cook for 5 more minutes.

  4. Strain the liquid through a sieve to obtain a clear liquid without residues or pulp.

  5. Add the remaining water, the lemon juice and store in a bottle in the fridge.

  6. Serve cold with ice.
