Breakfast Baking

Ingredients

  • 1.5 cups of green banana flour
  • 1/4 cup chia seeds
  • 1/2 cup natural coconut yoghurt
  • 1/2 cup water
  • 2-3 tablespoons of maple syrup (depending on sweet tooth scale)
  • tsp. ground cinnamon
  • 1/2 tsp vanilla bean paste
  • 1.5 tsp gluten free baking powder
  • squeeze of lemon juice (to activate the powder)
  • preheat oven to 180 degrees
  • spoon evenly into muffin tray, fills 6 nicely.

Preparation

  1. Preheat oven to 180 degrees

  2. Mix all ingredients ex. chia seeds in a blender until smooth & mixed well

  3. Spoon into bowel & add chia seeds, sit for 10 mins. If the mix seems to runny after the chia seeds have soaked you add a little more flour & stir

  4. Spoon evenly into muffin tray, fills 6 nicely

  5. Bake for 20-25mins until brown in top.. they will still look a little moist (that word ?) at this stage

  6. Sit for 15 before, the inside should then look just right
