Vegan Lemon Poppy Muffins
Ingredients
- you will need:
- 1 and 3/4 cups cake flour
- 1/2 cup of white sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- a pinch of salt
- 1 tsp vanilla essence
- 1 tsp apple cider vinegar
- 2 tbsp melted coconut oil or dairy free butter
Preparation
Preheat oven to 185 degrees celsius
Mix the dry and the wet separately, excluding the coconut oil or meted dairy free butter
Add the wet to the dry until combined, and then add the oil while stirring
Do not over mix, make sure it’s just combined ?
Using a lined/well greased muffin pan, fill up until 3/4 of the way full
Bake at 185 degrees for the first 5 minutes, then bake at 175 degrees for 15 mins, or until it passes the toothpick test
Let cool, and then top with a mix of lemon juice + icing sugar and a bit of lemon zest!
