Ingredients

  • 1 1/4 cups pecans
  • 10 medjool dates, pitted
  • 1/2 tsp vanilla
  • pinch of salt
  • for filling
  • 1.5 cups raw cashews, soaked
  • 1 lemon, juiced
  • 1/4 cup maple syrup
  • 1/4 cup oat milk
  • 1/4 vanilla oat creamer
  • 1 tsp vanilla

Preparation

  1. Pulse base ingredients until crumbly

  2. Press into a spring form pan (i used a 9inch)

  3. Blend remaining ingredients until smooth

  4. Pour over base and smooth out

  5. Freeze for 4-6 hours

  6. Remove from freezer 10 min before serving!

  7. I had some stewed strawberries and rhubarb so i added that on top but it also tastes lovely on it's own!
