Dessert
Ingredients
- 1 1/4 cups pecans
- 10 medjool dates, pitted
- 1/2 tsp vanilla
- pinch of salt
- for filling
- 1.5 cups raw cashews, soaked
- 1 lemon, juiced
- 1/4 cup maple syrup
- 1/4 cup oat milk
- 1/4 vanilla oat creamer
- 1 tsp vanilla
Preparation
Pulse base ingredients until crumbly
Press into a spring form pan (i used a 9inch)
Blend remaining ingredients until smooth
Pour over base and smooth out
Freeze for 4-6 hours
Remove from freezer 10 min before serving!
I had some stewed strawberries and rhubarb so i added that on top but it also tastes lovely on it's own!
