Nutty and Fruity Pearl Couscous Salad

Ingredients

  • 1 cup (2.5 dl) uncooked pearl couscous
  • 1/2 tablespoon salt
  • boiling water
  • 2 garlic cloves
  • 100 grams blanched almonds
  • 3 tablespoons raisins
  • arils from 1/2 pomegranate
  • juice from 1 orange
  • 2 tablespoons parsley
  • 2 tablespoons fried onions
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground clove
  • salt to taste
  • 1 tablespoon olive oil

Preparation

  1. Cook pearl couscous in lots of boiling water with the salt for 6-7 minutes like pasta, then drain.

  2. Meanwhile, add olive oil to a pan, heat to medium, add almonds and stir-fry until golden brown, then remove them and add raisins, stir-fry for 20-30 seconds, then remove.

  3. Add garlic to the pan and stir-fry for 30-45 seconds, then add orange juice, cooked pearl couscous, coriander, black pepper, cinnamon, clove, and salt, mix well and stir-fry for 1-2 minutes until liquid is absorbed.

  4. Remove from heat and mix in parsley, raisins, almonds, and fried onions.
