Vegan Banana Muffins with Walnuts and Chocolate Chips
Ingredients
- 2 ripe bananas
- 1 flax egg (1 tbsp of grounded flax seeds + 3 tbsp of water mixed together)
- 1 dl brown sugar
- 0.5 dl rapseed oil
- 1 dl oatmilk
- 1 dl crushed walnuts
- 1 dl dark chocolate chocolate chips
- 3 dl flour
- 1 tsp vanilla powder
- 1 tsp bicarbonate
- Pinch of salt
Preparation
Prepare the flax egg by mixing 1 tbsp of grounded flax seeds with 3 tbsp of water. Set aside.
Mash the ripe bananas thoroughly and add them to a mixing bowl.
Add the brown sugar, rapseed oil, oatmilk, and prepared flax egg to the mixing bowl with the mashed bananas. Whisk everything together until well combined.
In a separate bowl, combine the flour, vanilla powder, bicarbonate, and a pinch of salt.
Gradually add the dry ingredient mixture to the wet ingredients in the mixing bowl. Stir until a smooth batter forms.
Chop the walnuts into small pieces and add them to the batter along with the dark chocolate chocolate chips. Mix everything together until evenly distributed.
Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
Grease or line 6 large muffin forms.
Divide the batter evenly among the muffin forms.
Bake the muffins in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Once baked, remove the muffins from the oven and let them cool slightly before transferring them to a wire rack to cool completely.
