Oil and Coconut Blossom Nectar

Ingredients

  • 1 1/2 cups porridge oats
  • 1/2 cup chopped mixed nuts
  • 1/2 cup coconut flakes
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup almonds
  • 1/4 cup walnuts
  • 1/2 cup raisins
  • 2 tbsp goji berries
  • 1/4 cup cocofina coconut oil
  • 1/4 cup cocofina coconut nectar

Preparation

  1. Chop the almonds and walnuts roughly and stir all the dry ingredients together

  2. Melt the coconut oil in a bowl, add the coconut nectar and nut butter and mix well. Pour the wet ingredients over the dry ones and mix well. Tip into a lined baking tray and press down so it is compacted together. Bake in the oven at about 150°C for 20-30 mins depending on how crunchy you like your granola. Leave to cool completely in the tray before breaking up into clusters. Should keep in an airtight container for a week or two if you manage to make it last that long
