Carrot Cake Pancakes
Ingredients
- 130g spelt flour
- 1 tsp baking powder
- Pinch of sea salt
- 1 banana
- 200ml plant milk (unsweetened soya)
- Half a grated carrot
- 20g chopped walnuts
- 20g sultanas
- 1 tsp cinnamon
- 1/2 tsp ginger & cardamom
- Pinch of nutmeg
- 1 tsp vanilla extract
- 10g protein powder (optional)
Preparation
In a large bowl, mix together the flour, salt, protein powder, spices, and baking powder.
Mash the banana or blend it with the milk. Add both to the bowl and mix well.
Add the grated carrot, vanilla extract, sultanas, and walnuts to the bowl. Mix together until you have a thick batter.
Heat a little oil in a large frying pan over high heat.
Cook the pancakes for 2 minutes on each side until golden brown.
Serve the pancakes with yogurt and fruit.
