Fluffy Vegan American Pancakes

Ingredients

  • 200g plain flour (gluten-free also works)
  • 300ml any milk
  • 1 tbsp any sugar/sweetener/syrup
  • 1 tsp baking powder
  • Squeeze of lemon juice
  • Low-fat cooking spray

Preparation

  1. Warm the milk slightly and add lemon juice to it. Let it sit and curdle. Soy milk works well for this.

  2. In a bowl, combine all the ingredients, including the curdled milk. Whisk until the batter is smooth.

  3. Heat a pan over medium heat and lightly coat with low-fat cooking spray or oil.

  4. Spoonfuls of batter onto the pan to form mini pancakes. Cook for about 1 minute on one side until bubbles form on the surface.

  5. Carefully flip the pancakes and cook for another minute on the other side, until golden brown.

  6. Stack the pancakes and serve them with your choice of toppings. Options include low-fat margarine and sugar-free syrup.
