Vanilla Breakfast Pancakes with Sparkling Water

Ingredients

  • 1 cup sparkling water
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla bean paste
  • fresh fruit and berries and maple syrup, for serving

Preparation

  1. In a mixing bowl add sparkling water and sift in flour and baking powder, mix until combined and no lumps remain

  2. Add in vanilla bean paste and mix until just combined

  3. Let the mixture sit for 5 minutes

  4. Drop about 2 tablespoons of the batter onto the pan over medium heat

  5. When bubbles pop, flip the pancake over

  6. Cook for another couple of minutes

  7. Repeat with the remaining batter

  8. Serve pancakes warm with fresh fruit and berries, drizzled with maple syrup

  9. Enjoy right away!
