Fluffy Vegan Strawberry Pancakes Breakfast
Ingredients
- 1 ripe banana
- 3/4 cup unsweetened almond milk
- 1 teaspoon @naturally_sweet_australia stevia syrup
- 1 teaspoon olive oil
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 cup chopped fresh strawberries
Preparation
In a mixing bowl, mash banana and add milk, stevia syrup, and oil, stir to combine.
Sift flour and baking powder together and add into the wet ingredients. Mix until just combined and let the mixture rest for 5 minutes.
Drop about 2 tablespoons of the batter onto the greased pan over medium heat and top with a few strawberry pieces. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter.
Serve pancakes warm, drizzled with stevia syrup and your favorite toppings. Enjoy!
