Vegan Gluten-Free Chocolate Pancakes
Ingredients
- 1 ripe banana
- 2 tsp. coconut oil
- 125 grams buckwheat flour
- 200 ml unsweetened almond milk
- 2 tsp. baking powder
- 2 tbsp. natural chocolate paste
- 1/2 tsp. vanilla extract
- 3 tbsp. cocoa powder
Toppings
- fresh fruits, peanut butter, etc.
Preparation
Mash the ripe banana in a bowl.
Add the coconut oil, almond milk, vanilla extract, and natural chocolate paste to the banana and mix well.
In another bowl, combine the buckwheat flour, baking powder, and cocoa powder.
Pour the wet mixture into the dry mixture and stir until just combined.
Heat a non-stick pan over medium heat and lightly grease with oil.
Pour batter onto the pan to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown.
Serve with desired toppings.
