Bean Enchiladas

Ingredients

  • 1 onion, chopped
  • 1 pepper, chopped
  • 3 tins of beans of your choice, i used 2x black beans and 1x pinto beans, drained
  • 2 garlic cloves, chopped
  • 500ml tomato passata
  • 1 tsp mixed herbs
  • 1 tsp chilli powder
  • 1 stock cube, crushed
  • 1 tsp onion powder
  • vegan cheese, grated
  • wraps

Preparation

  1. Add the onion and pepper to a pan, with a little oil and fry for 5-7 minutes. Add the beans and keep stirring for a few minutes

  2. Meanwhile make the sauce. Fry the garlic in a separate pan, once cooked add the heat add the herbs and spices to the pan. Fry for another minute and then add the tomato passata and veg stock cube. Leave to simmer for a few minutes. Blend the sauce, add a handful of cheese and mix the majority of it to the bean mixture

  3. Spoon the mixture into wraps. Pour the remaining sauce on top and sprinkle with cheese. Put in a preheated oven (200 degrees) for 10 minutes
