Broccoli and Pea Alfredo
Ingredients
- 1 pound of pasta of choice (or zoodles)
- 1/2 cup of raw pumpkin seeds(toasted is fine too)
- 1 1/2 tsps of pink himalayan salt
- 3 cloves of garlic
- 2 tbs of onion powder
- 1 1/2 cups of canned coconut milk
- 2 tsps of lemon juice
- 4 tbs of nutritional yeast
- 1/4 tsp of black pepper
- dash of nutmeg
- 1/2 cup of green peas
- 1/2 cup of chopped steamed broccoli
Preparation
Boil water on medium high heat in a large pot, add pasta once water has reached boiling point and lower heat to medium
Now that the pasta is cooking combine all ingredients in a food processor excluding peas and broccoli
Blend until a creamy consistency forms
Drain pasta and pour sauce into pot, add veggies and stir well until all ingredients are well combined
Garnish with nutritional yeast and enjoy???? #threebunnies
