Chilled Penne Pasta Salad
Ingredients
- 300 grams boiled penne pasta
- 200 grams cherry tomatoes
- 2 green onions
- 10 pieces dried tomatoes
- 5 slices mortadella
- 1 bunch arugula
- 1 cup green basil
- 1/2 cup parsley leaves
Sauce
- 2 tablespoons balsamic vinegar
- 1/2 cup olive oil
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
For serving
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 piece parmesan cheese
- 10 walnuts
Preparation
Boil the pasta according to package instructions, rinse with cold water, and let it cool completely.
For the sauce: in a deep bowl, combine balsamic vinegar, olive oil, oregano, salt, and black pepper; mix well with a whisk or fork.
Prepare the serving dish.
Place the pasta in the serving dish.
Chop the arugula into large pieces.
Slice the green onions into slices.
Cut the cherry tomatoes in half.
Cut the dried tomatoes into small pieces.
Cut the mortadella into cubes.
Add all the salad ingredients on top of the pasta.
Sprinkle the shredded cheddar, mozzarella, parmesan cheese, and walnuts over the salad.
Drizzle the sauce over the salad before serving.
