Pasta and Vegetable Salad
Ingredients
- 300 grams boiled penne pasta
- 200 grams cherry tomatoes
- 2 green onion stalks
- 10 pieces sun-dried tomatoes
- 5 mortadella slices
- 1 bunch arugula
- 1 cup green basil
- 1/2 cup parsley leaves
Sauce
- 2 tablespoons balsamic vinegar
- 1/2 cup olive oil
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/4 teaspoon black pepper
For serving
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 piece parmesan cheese
- 10 walnut halves
Preparation
Boil the pasta according to package instructions, rinse with cold water, and let it cool completely.
For the sauce, in a deep bowl, combine balsamic vinegar, olive oil, oregano, salt, and black pepper, and mix well with a whisk or fork until blended.
Prepare the serving dish.
Place the pasta in the serving dish.
Chop the arugula into large pieces.
Slice the green onions.
Cut the cherry tomatoes in half.
Chop the sun-dried tomatoes into small pieces.
Cut the mortadella into cubes.
Add all the salad ingredients on top of the pasta.
Sprinkle the cheddar, mozzarella, parmesan cheese, and walnuts over the salad.
Drizzle the sauce over the salad before serving.
