Greek Pasta Salad

Ingredients

  • 16 oz pasta of choice
  • 1 can chickpeas, drained and rinsed
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup @mezzetta kalamata olives
  • 1/2 cup vegan feta
  • 1/4 cup thinly sliced red onion
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • juice from 1/2 of a lemon
  • 1/2 tsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Preparation

  1. Cook pasta in salted water according to package directions

  2. Drain and rinse, then add to a mixing bowl with remaining ingredients

  3. Whisk together dressing ingredients, pour over pasta salad and toss well
