Greek Pasta Salad
Ingredients
- 16 oz pasta of choice
- 1 can chickpeas, drained and rinsed
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1/2 cup @mezzetta kalamata olives
- 1/2 cup vegan feta
- 1/4 cup thinly sliced red onion
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- juice from 1/2 of a lemon
- 1/2 tsp dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
Preparation
Cook pasta in salted water according to package directions
Drain and rinse, then add to a mixing bowl with remaining ingredients
Whisk together dressing ingredients, pour over pasta salad and toss well
