High Protein Peanut Noodle Salad
Ingredients
- 8 oz box of chickpea pasta (227g)
- 1 cup frozen corn (thawed)
- 1 red bell pepper, thinly sliced
- 1 medium carrot (use a vegetable peeler to cut into ribbons)
- 1 cup frozen edamame (thawed)
- 1/4 cup fresh cilantro
- 2 scallions, sliced thinly
- 1 peanut sauce recipe (see below)
- 4 tbsp natural peanut butter (can use almond butter or tahini as a substitute)
- 2 tbsp soy sauce or coconut aminos
- 1 tbsp maple syrup
- 1 tsp brown mustard
- 1 tbsp sriracha
- 1/2 tsp garlic powder
- Juice of half a lime
- 3 tbsp of water
Preparation
Combine all sauce ingredients in a bowl and set aside. Feel free to adjust the consistency of the sauce by adding more water.
Prepare pasta according to the package instructions. Rinse the cooked pasta under cold water and place it in a large bowl.
Add the thawed edamame, corn, carrot ribbons, sliced bell pepper, chopped cilantro, and sliced scallions to the bowl with the pasta.
Pour the peanut sauce over the salad ingredients and toss everything together until well combined.
Serve the High Protein Peanut Noodle Salad immediately and enjoy!
