Orzo Mediterranean Pasta Salad

Ingredients

  • 2 portions of Orzo pasta
  • 1 onion, diced (red or white)
  • 2 cloves of garlic, crushed
  • 1 courgette, diced
  • 1 red pepper, diced
  • 1 tsp oregano
  • 1 tbsp avocado /olive oil

Preparation

  1. Cook the orzo according to the instructions

  2. In a frying pan, warm the oil on a medium heat before adding the onion, oregano and garlic and stir for 2-3 minutes

  3. Add your diced veggies and a splash of water to ensure they cook through (leave out the water if you like a bit of bite/aren’t making it for a baby). Once cooked, add the orzo and a little more oil if needed. Season with salt (leave out if making for baby) and pepper
