Orzo Mediterranean Pasta Salad
Ingredients
- 2 portions of Orzo pasta
- 1 onion, diced (red or white)
- 2 cloves of garlic, crushed
- 1 courgette, diced
- 1 red pepper, diced
- 1 tsp oregano
- 1 tbsp avocado /olive oil
Preparation
Cook the orzo according to the instructions
In a frying pan, warm the oil on a medium heat before adding the onion, oregano and garlic and stir for 2-3 minutes
Add your diced veggies and a splash of water to ensure they cook through (leave out the water if you like a bit of bite/aren’t making it for a baby). Once cooked, add the orzo and a little more oil if needed. Season with salt (leave out if making for baby) and pepper
