Pasta Salad

Ingredients

  • * 1 cup cashews
  • * 2 Tsp nutritional yeast
  • * Juice of 1 large lemon
  • * 4 Tbsp yellow/Dijon mustard
  • * 2 Tbsp agave or maple syrup
  • * 1/4 cup water
  • * 2 Tsp Apple cider vinegar
  • * Salt & Pepper to taste
  • Pasta salad ingredients
  • * 12oz pasta shells
  • * 1 small can of slice black olives
  • * 2 Persian cucumbers
  • * 1 cup cherry tomatoes
  • * 1/2 red onion
  • * Fresh parsley to taste

Preparation

  1. Soak cashews overnight or in boiling hot water for 30 minutes

  2. Add all vegan mayo ingredients to blender and blend until smooth

  3. Boil large pot of water and cook pasta as directed

  4. Meanwhile dice cucumber, tomato, onion. Open can of olives, drain and rinse

  5. Drain pasta and add to large mixing bowl. Let cool off for at least 15 minutes. Add veggies and mix in vegan mayo

  6. Chill in fridge for at least one hour. Serve with fresh parsley! ⠀⠀
