Cozy Dinner Tonight... Dairy-Free and Ultra Creamy Roasted Red Pepper Sauce Over Gluten-Free Capellini Noodles

Ingredients

  • 8 ounces roasted red peppers (i use jarred when i'm in a hurry)
  • 1/2 cup filtered water
  • 1/4 cup diced red onion
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder (or 2 garlic cloves)
  • 1/2 teaspoon onion powder
  • pinch of red pepper flakes (optional for heat)

Preparation

  1. Blend until smooth and creamy

  2. Taste and adjust seasonings if needed

  3. Pour over 12 ounces of capellini or spaghetti noodles

  4. I sometimes melt in some vegan butter or drizzle on some extra virgin olive oil

  5. Garnish options: fresh parsley or basil, vegan parm, red pepper flakes and/or lemon zest
