Cozy Dinner Tonight... Dairy-Free and Ultra Creamy Roasted Red Pepper Sauce Over Gluten-Free Capellini Noodles
Ingredients
- 8 ounces roasted red peppers (i use jarred when i'm in a hurry)
- 1/2 cup filtered water
- 1/4 cup diced red onion
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder (or 2 garlic cloves)
- 1/2 teaspoon onion powder
- pinch of red pepper flakes (optional for heat)
Preparation
Blend until smooth and creamy
Taste and adjust seasonings if needed
Pour over 12 ounces of capellini or spaghetti noodles
I sometimes melt in some vegan butter or drizzle on some extra virgin olive oil
Garnish options: fresh parsley or basil, vegan parm, red pepper flakes and/or lemon zest
