Creamy Za'atar and Zucchini Pasta
Ingredients
- 1 small yellow onion, finely chopped
- 1 zucchini, thinly sliced
- 1 tablespoon olive oil
- 2 tablespoons Za’atar spice blend
- 2 tablespoons Nutritional yeast or vegan parmesan
- 250 ml (1 cup) oat based heavy cream or cooking cream (or other plant based heavy cream or cooking cream)
- salt and pepper to taste
- 350 g linguine pasta (or other pasta of preference)
Optional toppings
- fresh thyme
- lilac flowers
- cracked black pepper
- flaky sea salt
- more Za’atar
Preparation
Cook the pasta according to package instructions and save about 1 cup of the cooking water before draining.
Heat olive oil in a pan, add onions and sauté on medium heat until translucent. Add zucchini and stir-fry until it starts to brown slightly, then add all remaining ingredients, stir well, and simmer on medium-low heat for a couple of minutes. Taste and adjust with more salt and pepper.
Mix the sauce with the drained pasta, wait 1 minute to let the pasta soak up the sauce, then add some of the pasta water if needed to make it more saucy.
Add toppings and serve immediately.
