Creamy Za'atar and Zucchini Pasta

Ingredients

  • 1 small yellow onion, finely chopped
  • 1 zucchini, thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons Za’atar spice blend
  • 2 tablespoons Nutritional yeast or vegan parmesan
  • 250 ml (1 cup) oat based heavy cream or cooking cream (or other plant based heavy cream or cooking cream)
  • salt and pepper to taste
  • 350 g linguine pasta (or other pasta of preference)

Optional toppings

  • fresh thyme
  • lilac flowers
  • cracked black pepper
  • flaky sea salt
  • more Za’atar

Preparation

  1. Cook the pasta according to package instructions and save about 1 cup of the cooking water before draining.

  2. Heat olive oil in a pan, add onions and sauté on medium heat until translucent. Add zucchini and stir-fry until it starts to brown slightly, then add all remaining ingredients, stir well, and simmer on medium-low heat for a couple of minutes. Taste and adjust with more salt and pepper.

  3. Mix the sauce with the drained pasta, wait 1 minute to let the pasta soak up the sauce, then add some of the pasta water if needed to make it more saucy.

  4. Add toppings and serve immediately.
