Crunchy Glass Noodle Salad
Ingredients
- 150g Glass noodles
- 1/4 Cucumber
- 1 Kohlrabi
- Thumb sized piece of ginger
- 1 Spring onion
- 1 Avocado
- 2tbs Roasted peanuts
- 1 Chilli
- Juice of 1 lemon
- 2tbs Sesame oil
- 1ts Powdered sugar
- 1 Handful cilantro
- 3tbsTamari sauce
Preparation
Prepare the glass noodles as said in the packing instructions
Cut the cucumber into thin pieces and then in halves
Peel the kohlrabi and then slice with a potato peeler into slim slices
Cut the ginger into tiny pieces
Chop the spring onion and the chilli and sear for 2-3 minutes in hot oil
Chop the avocado
Chop the cilantro
Grind the peanuts
Mix everything with the glass noodles
Squeeze in the lemon juice
Add the Tamari sauce, the powdered sugar and the oil
Mix everything together very well and let the salad rest for 10 minutes
When serving, add a couple more peanuts and some fresh cilantro on top
