Easy Blt Pasta with Spinach

Ingredients

  • your favorite noodles
  • 6 pieces of bacon
  • 1 pint cherry tomatoes
  • 3 garlic cloves
  • 2 handfuls of spinach
  • Parmesan cheese
  • chili flakes
  • salt and pepper
  • olive oil

Preparation

  1. Cook noodles until al dente, reserve 1/2 cup pasta water, and drain.

  2. Cook bacon, remove, and roughly chop.

  3. Add olive oil to a hot pan and add 1 pint of halved cherry tomatoes.

  4. Cook for 5 minutes, then add minced garlic and chili flakes, and continue cooking for 3 more minutes.

  5. Add cooked pasta, bacon, 1/4 cup Parmesan, spinach, and 1/3 cup pasta water.

  6. Toss for 2 minutes, then remove from heat.

  7. Serve with additional Parmesan, chili flakes, and lots of cracked black pepper.
