Easy Spring Orzo Pasta Salad

Ingredients

  • 1/2 cup Orzo
  • 1 1/2 cups Cherry Tomatoes
  • 1 cup Radishes
  • 1/4 cup Fresh Dill
  • 2 cups Arugula
  • 1/2 chopped Red Onion
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Tamari
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Maple Syrup
  • 1/2 cup Red Onion
  • 1/2 teaspoon Garlic Powder

Preparation

  1. Cook orzo according to package directions.

  2. Chop the radishes and finely chop the onion and dill in the meantime.

  3. To make the dressing, combine the onions with tamari, apple cider vinegar, maple syrup, dijon mustard, garlic powder and chili flakes, then mix well and set aside to marinate for a few minutes.

  4. Once the pasta has cooled, add it to a mixing bowl with tomatoes, radishes, arugula and dill.

  5. Add the dressing and toss to combine.
