Making Pasta Sauces
Ingredients
- 6 tomatoes, diced
- 20 cherry tomatoes, halved
- 1 and 1/2 large red onion, finely diced
- 5 garlic cloves, finely chopped
- 1 red chilli, finely chopped
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1 tsp good pepper
- 2 tsp chilli flakes
- 1 tsp balsamic vinegar
- 1/2 tsp brown sugar
- salt to taste
Preparation
Pour cooking oil into a large sauté pan on a medium to low heat
Once oil is heated add onion and sauté on low heat until soft and translucent (this can take a while, be patient)
Add garlic and red chilli
Cook until raw smell disappears
Add tomato paste and stir into the ingredients until it deepens in colour
Add diced tomatoes and sauté until they break down
Add herbs, seasoning, balsamic vinegar and sugar and stir everything well
Taste for all seasoning and spice
This is meant to be spicy and all chillis are different
Cook the sauce for 5 minutes for ingredients to combine
Take it off the heat and let it cool
Once cooled blitz the sauce until smooth-ish
I do this so you get a sauce that clings to the pasta
Get the sauce back on a low heat and chuck in the halved cherry tomatoes
Cook until the tomatoes soften, then serve up with your fave pasta and top with parmesan (or not if you’re vegan)!
