Marmite Pasta with Roasted Veg for Dinner

Ingredients

Preparation

  1. Roast whatever veg you fancy in the oven for 20-30 mins- I used butternut squash, red onion, mushroom, courgette and garlic

  2. Cover your veg in olive oil and season with salt an pepper

  3. Cook your pasta

  4. Remove a bit of your pasta water and make some veg stock with it- using the water from the pasta helps to bind your sauce so it sticks to the pasta properly instead of just being a watery mess

  5. Once the pasta is done, drain the pasta and in the same pan add some vegan butter, melt and then add a teaspoon of flour

  6. Add the pasta back into the pan and mix

  7. Mix some marmite with the veg stock and then add to the pan. Measure with ur eye- you don’t want to add so much that it’s like a soup

  8. Add your veg and season to taste- you might even want to add some more marmite at this stage if you like it super strong
