Marmite Pasta with Roasted Veg for Dinner

Preparation
Roast whatever veg you fancy in the oven for 20-30 mins- I used butternut squash, red onion, mushroom, courgette and garlic
Cover your veg in olive oil and season with salt an pepper
Cook your pasta
Remove a bit of your pasta water and make some veg stock with it- using the water from the pasta helps to bind your sauce so it sticks to the pasta properly instead of just being a watery mess
Once the pasta is done, drain the pasta and in the same pan add some vegan butter, melt and then add a teaspoon of flour
Add the pasta back into the pan and mix
Mix some marmite with the veg stock and then add to the pan. Measure with ur eye- you don’t want to add so much that it’s like a soup
Add your veg and season to taste- you might even want to add some more marmite at this stage if you like it super strong
