Peanut Butter and Tofu Stir Fried Noodles

Ingredients

  • 1 block tofu
  • 3 tbsp soy sauce
  • 1 tbsp peanut butter
  • 1 tbsp maple syrup
  • 1 garlic clove
  • 2 tbsp sesame oil
  • 1 carrot
  • 1 pepper
  • 3 spring onions
  • rice noodles
  • sesame seeds
  • lime juice
  • fresh coriander

Preparation

  1. Chop 1 block of tofu into cubes

  2. Spread them onto a baking tray covered with baking paper

  3. Bake for 25 minutes

  4. Make the sauce by mixing in a bowl: 3 tbsp soy sauce, 1 tbsp peanut butter, 1 tbsp maple syrup, 1 crushed garlic clove, 2 tbsp sesame oil

  5. Remove the tofu from the oven and toss it into the bowl with the sauce

  6. Add the tofu to a frying pan with half the sauce

  7. Add 1 finely chopped carrot, 1 pepper, 3 spring onions and cook for 5-8 minutes

  8. In the meantime, cook rice noodles separately

  9. Add the cooked noodles to the pan with the remaining sauce

  10. Mix everything together and serve with sesame seeds, lime juice, soy sauce and fresh coriander
