Roasted Garlic Tomato Pasta

Ingredients

  • 1 head garlic
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 1 yellow bell pepper, diced
  • 2 tbsp tomato paste
  • 1 tsp dried coriander
  • 1 tsp paprika
  • 3 medium tomatoes, diced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
  • 2 tbsp soy sauce or tamari
  • 3 cups (300g) pasta of your choice
  • Juice of 1 lemon

Preparation

  1. Preheat the oven to 350 degrees F or 180 degrees C. Remove the top of the garlic, and drizzle it with 1 tablespoon olive oil. Wrap it tightly in foil and roast for 45 minutes, until fully softened.

  2. Meanwhile, heat the rest of the olive oil in a large skillet. Cook the onion and pepper with tomato paste, dried coriander and paprika for 5-6 minutes, until starting to soften, over a medium heat. Then, add the tomatoes, salt, pepper, Italian seasoning and soy sauce. Cook for 10 minutes more, stirring frequently.

  3. Meanwhile, cook the pasta according to instructions on packaging. Drain when done, but retain 1/2 cup pasta water.

  4. Squeeze in the roasted garlic into the skillet and stir together. Then, add the pasta, pasta water and lemon juice, stirring for a few minutes more.

  5. Serve immediately, or keep in the fridge in an airtight container for up to 5 days.
