Simple Plant Based Bolognese

Ingredients

  • 1 onions chopped
  • 2 carrots diced finely
  • 4 garlic cloves chopped finely
  • 1 red chilli chopped finely
  • 10 cherry tomatoes diced
  • 6 sun-dried tomatoes diced
  • 1 tbsp soy sauce
  • 2 tsp smoked paprika
  • 2 tsp dried mixed herbs
  • 2 tbsp tomato purée
  • 1 tbsp date syrup
  • 1 pack @merchantgourmet puy lentils
  • 400g chopped tomatoes
  • salt & pepper to taste
  • 1/4 cup oat milk mix everything together

Preparation

  1. Add in a Handful chopped parsley at the end when you take the mixture off the heat ?

  2. Serve up with wholewheat spaghetti, top with more fresh basil, side of vegan ? garlic bread and if you are feeling special a side of wine ? also top you garlic bread with fresh rocket it’s sooo good
