Simple Plant Based Bolognese

Ingredients

  • 1 onion chopped
  • 2 carrots diced finely
  • 4 garlic cloves chopped finely
  • 1 red chilli chopped finely
  • 10 cherry tomatoes diced
  • 6 sun-dried tomatoes diced
  • 1 Tbsp soy sauce
  • 2 tsp smoked paprika
  • 2 tsp dried mixed herbs
  • 2 tbsp tomato purée
  • 1 tbsp date syrup
  • 1 pack @merchantgourmet puy lentils
  • 400g chopped tomatoes
  • Salt & pepper to taste
  • 1/4 cup oat milk
  • A handful chopped parsley

Preparation

  1. Add a handful of chopped parsley at the end when you take the mixture off the heat.

  2. Serve with wholewheat spaghetti, top with more fresh basil, side of vegan garlic bread, and optionally wine. Also, top garlic bread with fresh rocket.
