Vegan Lasagne with Mince and White Sauce

Ingredients

Mince

  • Vegan mince
  • Jar of passata (add water as required)
  • 1 tsp onion granules
  • 1 tsp garlic granules
  • 2 tbsp tomato purée
  • Veg stock cube
  • Crushed chillies (optional)

White sauce

  • 2 tbsp plain flour
  • 2 tbsp vegan butter
  • 1 tsp English mustard
  • 600 ml approximately of plant milk
  • Large amount of vegan cheese
  • Large amount of nutritional yeast
  • Salt and pepper to taste

Preparation

Preparing mince

  1. Simmer the mince ingredients for 10-15 minutes

Making white sauce

  1. Blitz the white sauce ingredients and warm on the hob until it thickens

  2. Once thickened, add vegan cheese, nutritional yeast, salt, and pepper

Assembling and baking

  1. Layer the mince, white sauce, and lasagne sheets in a dish

  2. Cook at 200 degrees Celsius for 20-25 minutes with the lasagne covered in foil

  3. Remove the foil and cook for another 20 minutes until bubbling and golden on top
